I actually really like Eisenfunk's 8-bit album.
Mind.in.a.box also did a song titled 8-bits on their last album. It's still classic, well produced mind.in.a.box sound and not too much 8-bit sound in itself. I honestly think the song is about classic video games, more than anything. Here's a link to a video they did for the song.
